Migas

Hola Amigos! Are you feeling Eggcellent because I am? If you’re looking for something easy and quick to make at home, you’re in the right place. Today we’re gonna make some Migas. Migas are tacos made with eggs, fried tortilla strips, and whatever veggies you like to add. Migas are traditionally eaten at breakfast time, but hey let’s be honest, breakfast always tastes a little better at night. These are easy to make, impossible to mess up ,and always hit the spot. Well grab your apron, and let’s go!

Makes 2 tacos 
Equipment:
1 saute pan
1 spatula
1 cutting board
1 chef’s knife
1 pair of tongs
1 skillet or deep-fryers

Ingredients:
3 Large Eggs  
3 Flour Tortillas (1 to cut and fry and 2 to fill with filling)
1 Cup of Shredded cheddar Cheese (as desired)
Diced veggies(suggestions onions,tomatoes,jalapeno)(as desired)
2 cups of Canola Oil

Step 1: Cut 1 tortilla into ½” strips. Small dice vegetables and set aside.

Step 2: Heat 2 cups of canola oil in pan on high heat to about 375 degrees F then fry tortilla strips until crispy. Should take about 4-6 minutes. 

Step 3: Saute desired veggies and set aside.

Step 4: Scramble eggs partially then add tortilla strips and desired veggies.

Step 5: Once egg mixture is cooked to liking, set aside. 

Step 6: Place 2 Whole flour tortillas on warm pan to slightly toast, then add egg mixture and cheese on top.

Step 7: Enjoy!
